Papilles restaurant is looking for a Sous-Chef to work alongside the head chef to manage daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking. Provides meal quality and consistency by following designated recipes.Papilles is a new restaurant in the East-Village lead by Andrea Calstier, young Chef with previous experience in Michelin-Starred restaurants in France and in New-York. He is looking for a dynamic and motivated experienced Sous Chef willing to evolved with him. Creativity and positivity are required. Papilles is a 22 seats restaurant where quality is the priority. You will work with a small and nice team full-time.Duties:Leads kitchen team in chef's absenceOversees and organizes kitchen stock and ingredientsEnsures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assuranceKeeps cooking stations stocked, especially before and during prime operation hoursHires and trains new kitchen employees to restaurant and kitchen standardsManages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concernsSupervises all food preparation and presentation to ensure quality and restaurant standardsWorks with head chef to maintain kitchen organization, staff ability, and training opportunitiesVerifies that food storage units all meet standards and are consistently well-managedAssists head chef with menu creationExperience:Formal Culinary TrainingPrevious Restaurant Experience (Michelin-starred restaurants preferable but not mandatory)Extensive Food and Beverage Knowledge,Restaurant Industry Knowledge,Strong Organizational SkillsAttention to Detail,Knowledge of Restaurant Regulations,Leadership,Management,Positivity,Ability to Work Under Pressure,Self-Motivated,Creative Problem-Solving Skills,Strong Verbal and Written Communication Skills,Exceptional Customer-Service Skills
